Originally from London with over 30 years' experience in food, including two decades working in Michelin starred restaurants, Spencer is known for his innovative menus and focus on local produce. Belinda has over 25 years' experience in premium resorts and high-profile restaurants around the world her favorites' being Malaysia, Thailand, Bali, Nepal and Phuket. Belinda is passionate about sustainability and committed to making a difference by supporting local businesses, using the best quality products available and developing the careers of young culinary professionals.
